National Onion Labs, Inc. (NOL) is excited to announce that Nevada based Peri & Sons Farms has contracted to participate in the NOL Flavor Certification Program . This is the first year that Peri & Sons Farms will be  joining the select group of distinguished NOL clients who are committed to providing mild and sweet onions that will help to grow the category through consumer satisfaction.

David Peri, of Peri & Sons Farms, has long felt the need for testing onion crops as a guide for growing the best onion possible.  “In recent years, the Sweet Onion Category has grown significantly and as a result, many companies are marketing Spanish yellow cooking onions as sweet onions, ruining the distinctiveness of the sweet onion in the minds of consumers,”  Stated Mr. Peri.  “Only through testing can we learn when and how and where to improve our management practices so that we can be sure the onions we offer the consumer will meet their expectations”  Retail buyers can be sure that when they receive the notice of NOL’s Certified Extra Sweet® or Certified Sweet® status regarding our Sweetie Sweet onions, they will know that we continue to expend the extra efforts to bring their customers a quality sweet onion.” 

David Burrell, president of NOL agrees with Mr. Peri about the need to test sweet onions to bring integrity back to the Sweet Onion category but he warns “Pungency is only a small part of the flavor of the onion.  We need to look at the total chemical profile of the onion to make sure it will meet the desires of the consumer.  An onion can be low in pungency but still have bitter or ‘off’ flavors that are “offensive.” At NOL we have tested onions that would “pass” the pungency test but we withheld Certified Sweet® and / or Certified Extra Sweet ® status because they had bitter and ‘off” flavors that would have failed the taste expectations of the consumer.
