Certified Extra Sweet® Onion and Crabmeat Stew

• 2 Med Certified Extra Sweet®  Onions (finely-diced and sautéed in butter until very soft)
• 2 Strips of raw bacon
• 1 Quart Half & Half
• 1/2 Gal whole milk
• 4 Cups potatoes (diced and pre-boiled)
• 1 Lb pre-cooked crab claw meat
• 4 Eggs
• 1 Cup sugar
• 4 T Corn Starch
• 1 Can evaporated milk
• 1 T salt
• 1 T pepper
• Juice of 1 fresh lemon

In a large pot, fry bacon until crisp.

Remove bacon and allow grease to cool. Return pot to medium heat, add sautéed onions, whole milk, half & half and crab meat to grease. Stir until steaming.

In a separate container, mix eggs, canned milk, sugar and corn starch to a smooth consistency. Add slowly to the steaming mixture. Simmer on low heat, stirring occasionally for 20
minutes. Add potatoes.

Continue heating for another 10 minutes.

Squeeze lemon into stew and serve.
